I visited Anmok, a national soup restaurant selected for the Busan Michelin Guide 2024. A Michelin-starred national soup restaurant... I only just found out now 🥹
The main branch is in Gwangalli, and I visited the Seomyeon branch! Currently, there are only two locations in Busan, and their business hours are slightly different. The main branch closes at 9 PM, and the Seomyeon branch closes at 10 PM, so please keep that in mind.

However, everyone in your party must be present in front of the store to enter. You can't go in first and place your order. Even if your CatchTable order is ready, everyone in your party must be at the store to enter.
While eating, someone from another party said they would go in first and order, but they were told that wasn't allowed. They had a bit of a disagreement about everyone having to arrive at the same time, and it stuck in my mind.
When I checked the CatchTable app beforehand, the main branch had a waitlist as soon as it opened, but the Seomyeon branch didn't show any waitlist on the app.
We quickly entered ~~!
We went around 11:20 AM on a weekday, and it was full. There was only one table for two left, so we were able to sit right away. It hasn't been open for long, but already...!! And after that, it was constantly full and had a waiting list... It seems easier to get a seat for two people.
There's a self-service bar in the middle, with many 4-person and 2-person tables around it. There were also counter seats.
The interior is really clean and sophisticated.
And there were so many staff members in the restaurant...? It was a bit chaotic because there were so many customers, but with so many staff members, the restaurant management and customer service seemed to be well-handled. Michelin is different, huh, haha.
I zoomed in and took a picture of the counter seats when it was momentarily empty. It would be a good place to eat for two.
You can order and pay at the same time using the kiosk provided at each seat !!!
When choosing the payment method, you can also choose to split the bill, which seems convenient for paying separately with a friend, haha.

I ordered the mixed national soup, and my companion ordered the basic pork national soup.
This is the basic setup, and you can get additional side dishes from the self-service bar. Even the basic setup at Anmok is neat and clean.

Mixed National Soup (₩ 10,500)
At Anmok, the rice is mixed in the soup by default!! The mixed national soup is a soup with brisket, head meat, and front leg meat mixed together.
Unlike regular mixed national soup, it didn't have separate innards.
Pork National Soup (₩ 10,000)
This is my companion's basic pork national soup! Thin, large slices of front leg meat were spread over it like a blanket. Amazing visuals 🤤

Anmok is seasoned well by default, so they recommend eating it without additional seasoning! If you find it lacking, you can add salt, pepper, or shrimp paste.
We both thought the seasoning was perfect and ate it without adding anything. The seasoning wasn't excessive, and the broth was really milky.
There are instructions on how to enjoy the national soup on the table. Try the broth as is~~ and add minced garlic, gochujang, etc.
There are also instructions for making pork and rice, but it seems you need to order the basic pork national soup to do that!
A clean meal ㅠㅠ
While market-style national soup is nice, sometimes this kind of style is appealing too. It would be perfect for a date in Busan.
Interestingly, the basic meat was cut into small cubes, which was fresh. It's the first time I've seen a national soup with cubed meat, but this way, the meat is scooped up with each spoonful, making the texture definitely better.
There was a lot of meat, and it didn't have any off-flavors. The mixed national soup had head meat, and so on, so it seems like those who like a variety of textures would enjoy it!
My companion likes garlic, so they poured it all over their soup, haha. They said it intensified the aroma of the national soup. I like garlic too, but I prefer the milky broth of the national soup as is. You can add it according to your preference.
Other tables were already drinking... I almost ordered soju or Boksundo-ga, but I barely managed to stop myselfㅠ
I almost had a hangover cure in the afternoon. We decided to come back and order the mixed boiled pork and spicy pumpkin national soup with soju next time!

Since national soup is basically delicious, it's hard to make it special. If you expect it to be super special just because it's a Michelin national soup, and go out of your way to visit Busan or wait for a long time, you might be disappointed. It's just really delicious and clean national soup!!
My companion and I slightly exaggerated and said the broth was like milk~~ The broth was milky, the meat was really soft and chewy, and there was no off-flavor, so we felt the quality of the meat was good.
Especially, the interior of the restaurant is clean, and I really want to go back there for drinks someday. I highly recommend it! 🫶🏻 The Gwangalli main branch seems to have more of a wait, but as a Michelin Guide-selected national soup restaurant, I think it would be great to visit if you're traveling to Busan.
